Easy “No Bake” Valentine’s Day Cookies

valentines day cookiesValentine’s day is fast approaching and with that the “Urgh” from most moms (especially the working moms) who now have to run around and make things for the kids for school.

Here is the solution for you- easy valentine’s day cookies that require 3 ingredients, about 30 minutes of your time and best of all – NO Baking! It is so easy, have the kids help you for some extra fun.

All you need is:

1 Packet of Marie Biscuits

2 slabs of Chocolate

sprinkles

Some red powdered or gel food colouring.

Wax paper

Step 1:

Melt the chocolate. If you have a double boiler you can use that and put the chocolate in the top pot and the water in the bottom. I, however, boil water in the kettle and use two bowls (I use ceramic bowls) that fit into each other, I put water in the bottom bowl and the chocolate in the other bowl and melt the chocolate like that.

Step 2:

Divide the chocolate mixture in half and colour the one half. The reason for using gel or powdered food colouring is because the normal water based food colouring that you buy in the store makes the melted chocolate go granular. If you put a mere drop of the normal food colouring in, the chocolate will be fine but then the colour will be pink and not red. If you do however put too much of this water based colour in and the chocolate does happen to go granular, then you simply need to add a teaspoon  or two of milk and mix it until the chocolate is smooth again. You then need to put the chocolate into the fridge to set for a few minutes so that it is not so runny.

An alternative to the food colour is to simply just use plain white and dark chocolate.

Step 3:

Make some heart shapes on the wax paper using a teaspoon and leave the chocolate to set in the fridge until the chocolate is hard again- about 15minutes. If you did use normal food colouring in your chocolate and added the milk then you will not make shapes on the wax paper as it will not set – instead you will simply draw the shapes directly on the cookies (after step 4 and 5).

Step 4:

Whilst the chocolate shapes are setting in the fridge, you will spread the chocolate over the marie biscuits.

Step 5:

Sprinkle some sprinkles over the chocolate and leave to set in the fridge for about 10 minutes until the chocolate is set.

Step 6:

When the chocolate shapes and chocolate cookies are set, remove the shapes carefully from the wax paper and place it on the chocolate cookies. Add heart sprinkles or some other decorations if you like. If you did add water food based colouring and milk to the chocolate, once it has cooled down, simply make the heart shapes directly onto the set chocolate cookie.

You can get creative and even use silver balls to make heart shapes directly onto the chocolate cookies (once set) rather than make chocolate shapes.  Once they are set and finished- pop them into a cellophane bag, tie with some ribbon and make a heart shaped card to go along with your treats!
